Steamed Gooey Chocolate Puddings
The best dessert for Easter, without heating up the kitchen. Fully steamed, these are easy and chocolatey and decadent!
This gooey chocolate pudding is a perfect Easter dessert, rich, comforting, and steamed to perfection in the Thermomix Varoma. With a soft texture and molten chocolate center, it’s an indulgent treat that requires no oven, making it easy to prepare while you focus on the rest of your Easter feast. Serve warm with vanilla ice cream, whipped cream, or a drizzle of custard. For an extra touch, add a sprinkle of pink salt flakes, a handful of fresh berries, or a dusting of cocoa powder.
Please note that if you steam these in a ceramic dish of any kind, the cooking time may vary. However, they do get firmer on cooling, so a gooey centre is what we are hoping for! With the new TM7 imminent, I am pretty sure you will fit all the little puddings into the Varoma in one steaming!

Need
- 125 Grams butter cubed BUY
- 250 Grams chocolate dark callets BUY
- 125 Grams coconut sugar
- 1 Teaspoon vanilla bean paste BUY
- 1 Pinch pink salt flakes BUY
- 20 Grams cornflour or cornstarch
- 40 Grams cocoa powder plus some more to finish BUY
- 2 eggs
- 120 Grams almond meal Recipe
- strawberries to serve
- Perfect Whipped Cream to serve Recipe

Place butter, chocolate, sugar and vanilla into the Thermomix bowl and melt 8 min/50°C/speed 1. Stop and scrape down sides of bowl as necessary.

Add remaining ingredients and blend 20 sec/speed 7.

Divide between ramekins or silicone cupcake moulds of choice. Place as many as you can fit into the Varoma dish and tray.

Scrape out remaining batter if there is any and reserve for the next batch.

Rinse out the Thermomix bowl and fill to 1L mark with water.

Set Varoma into position and steam brownies for 20 min/Varoma/speed 4.

Remove and cool slightly before dusting with plenty of cocoa powder. Serve with lashings of double or clotted cream.

Repeat with any remaining mixture you have.

Alternatively, you can prepare the batter, divide between moulds as directed, wrap and freeze, then steam to order. They will take longer if not thawed prior to steaming. If you are using ceramic ramekins, they may also need additional steaming time.
