The twelve days of Christmas Mocktails Day Eleven;
This one takes a slightly more time than some of our mocktails of recent days, but it is always worth it. So get that syrup cooked and cooling. Then enjoy this drink throughout the season. It is ultra Christmassy in flavour profile. You will love the scent that fills the kitchen with this syrup as you cook it.
Don't forget you can always sub in some vodka to get that little warm hit if you are needing it by now...which you may well be!

Spiced apple syrup
- 1 Vanilla Bean BUY
- 1 cinnamon stick(s)
- 1 whole clove
- 300 Grams apple juice

The Rest
- 600 Grams apple juice
- 160 Milliliters Lyre's Dry London Spirit (or vodka)
- 1/2 lemons juice
- 1 green apple, sliced thinly
- fresh rosemary sprigs for garnish

Slice vanilla bean in half, lengthways. Scrape the seeds out. Place seeds and the bean into the Thermomix bowl. Add cinnamon, clove and apple juice. Cook *10 min/Varoma/Reverse/speed 1. Cool.

When cool, strain apple syrup and discard the bits. Add remaining apple juice, Lyre's Dry London Spirit (or Vodka) and lemon juice to a jug over ice. Stir to combine.

Garnish with apple slices and rosemary.
