If you are having a few people around for drinkies, it is nice to have something to nibble on at the same time with no stress from your point of view. Preheat oven to 150°C. Line a baking tray with paper and set aside.

Place butter, honey, sugar, tomato paste and tamarind puree into the Thermomix bowl and melt 5 min/50°C/speed 1.

Add nuts, coconut and spices as well as salt and stir 5 sec/Reverse/speed 1.

Spread out onto the prepared tray.

Bake 25 minutes until well toasted and fragrant. You may need to stir part way through the baking process. Sprinkle nuts again with a small amount of salt. Cool and then break up before storing or serving.

Serve with the fresh mint if desired.

To store, place in airtight sealed containers or bags and store in the fridge. They will keep very well for up to 3 months. These would make a fabulous gift.
