Coconut Roughs were a childhood favourite of mine, and in an attempt to make them guilt-free, I came up with this very delicious and guilty-tasting recipe. Essentially a chocolate coconut butter, think outside the square and replace the cocoa with lime zest, lemon zest, lemon oil, wild orange oil, or freeze-dried raspberry powder...oh the possibilities.

1  

Place all ingredients into Thermomix bowl. Blend 4-8 min/speed 8.

Stop and scrape down sides of bowl and lid as necessary. The bowl will become quite warm.

3  

Place into lined baking tin or individula lined muffin tin and tap on bench to settle. Refrigerate.

4  

Cut into squares with a hot knife once set.
