Not unlike a clafoutis, this is loosely based on a French cake or muffin, the friand. Or I suppose, the marriage of the two.

Friands are a small, almond-based cake that originated in France, where they are known as 'financiers.' The name 'financier' is believed to be inspired by their association with the French financial district of Paris, specifically the wealthy bankers who frequented a patisserie near the Paris stock exchange in the 19th century. These cakes were small and easy to eat with one hand, making them ideal for busy professionals.

The friand is a slightly altered version of the original financier. While both use a similar base of almond meal, egg whites, and butter, friands often include fruits or other flavorings like berries, citrus, or chocolate. The term 'friand' is widely used in Australia and New Zealand, where these little cakes became incredibly popular due to their light, moist texture and rich almond flavor.

Though both friands and financiers share the same base, the difference mainly lies in the shape and regional preferences. Friands are typically baked in oval or rectangular molds, while financiers are traditionally baked in small rectangular or gold bar-shaped molds, reflecting their origins in the financial world.

Preheat oven to fan forced 170°C. Line the base of a 20cm springform pan with baking paper.

Place cherries in base of pan and sprinkle with raw sugar. Set aside.

Place almonds and sugar into Thermomix bowl and mill for 10 sec/speed 9.

Add remaining ingredients and blend for 10 sec/speed 6. Spread on top of cherries and bake for 45-50 minutes. Leave in turned off oven with door slightly ajar until just warm.

Slice and serve warm or cold.

With the obligatory dollop of cream, creme fraiche or ice cream.

This resembles a giant friand, and is truly a decadent dessert.
