Baked Cranberry Brie in Pastry
I served this a couple of years ago to my usual suspects who meet a few times a year with our husbands to share amazing decadent food. We had this for the starter, and there were groans and moans and no empty plates. SO, if you get the pastry and cranberry sauce all organised ahead of time, you will have plenty of happiness to go around the entire table. It works well on a grazing table, but equally well if you serve it on plates, with a little greenery for something free to get you through all the richness.

- 1 Batch Puff Pastry ready to roll Recipe
- 1 Kilo wheel of brie
- 250 Grams Spiced Orange Cranberry Jelly Recipe
- egg wash as needed

Preheat the oven to 170°C and line a baking tray.

Roll the pastry out into a large round, big enough to totally wrap the cheese wheel. Place onto the baking tray.

Place the cheese wheel into the centre.

Remove a circle of the cheese rind on top of the cheese, and place the cranberry sauce inside. Place the rind back on pushing down to 'seal'.

Wrap the cheese well with the pastry, ensuring there are no breaks in the pastry.

Brush with egg wash and bake 50 minutes until golden brown.

Serve in wedges, piping hot, being careful not to burn the roof of your mouth on the lava hot cheese and sauce.
