Cherry and Lemon Cheesecake Pizza

I love pizza as much as the next girl, and I am not afraid of dessert. You probably know that by now! This delicious thing is cheesecake on pizza...crank the heat, get mixing and then tell me how good it is! Enjoy.

- 1/2 Batch Basic Pizza Dough Recipe

Cherry Sauce
- 670 Gram jar Morello pitted cherries
- 60 Grams golden caster sugar
- 30 Grams cornflour

Lemon Cheesecake
- 80 Grams golden caster sugar
- Zest 1 lemon, finely grated
- Juice 1 lemon
- 1 egg
- 250 Grams cream cheese

Premake the Pizza Dough and be ready to roll!

Preheat the oven to as hot as you can get it (220°C plus) on a bread baking setting. If you have a pizza stone, heat it in the oven

Cherry Sauce:

Insert basket into Thermomix bowl and pour whole jar of cherries in. Remove basket (with cherries) and set aside.

Add sugar and cornflour to Thermomix bowl and cook 4–5 min/100ºC/ speed 4. Set aside.

Lemon Cheesecake:

Place sugar and zest into Thermomix bowl and mill 10 sec/speed 10.

Add remaining ingredients and blend 10 sec/speed 7. Scrape down sides of bowl and repeat.

To assemble pizza, pre-cook the base (without any topping) for about 5 minutes. Remove from oven. Spread with cheesecake mixture then top with cherry sauce and reserved cherries. Return to the oven for further 6–8 minutes until crust is puffed and golden and toppings are melting.
