Come Raid My Fridge; Moroccan Couscous with Mint
We have a lot of fun when we film Insider Club videos. It is all pretty much as you see it. No scripting, we may re-shoot a scene here and there but not often. We just go for it then let the editor do the story telling with what he captures on camera. We laugh a lot and we eat a lot. This recipe is no exception. Our newest set of recipes is called Come Raid My Fridge, where I literally rock up at someone's house (could be yours) to see what they have in their fridge and pantry on the day and then we make a three course meal from what is available. It is a little challenging, and if you are an avocado on toast person, please don't apply! We need a few things to create something amazing. Luckily for me as this is the first time we did this, Irene Briggs and her husband had a wonderful array of ingredients. They did not however have fresh mint, so we raided the next door neighbour's garden, thus the title of this recipe. But it has a certain ring to it don't you agree??
Anyway, this recipe is super tasty, super simple to prepare and goes very well with the Steamed Chicken Rolls we made to accompany it. Go and do my lovelies. Then apply for me to come and raid YOUR fridge! TOO much fun!

Need
- 1 Cup dried couscous
- 1 Cup boiling water
- 30 Grams Turkish apricots
- 5 Medjool dates, pitted
- 30 Grams walnuts, toasted
- 1/2 capsicum/bell pepper red
- 1/4 brown onion red
- 1 Handful kalamata olives
- Extra Virgin Olive Oil (EVOO) to taste BUY
- 1-3 lemons, juice only
- Pinches pink salt flakes to taste BUY
- freshly cracked black pepper to taste
- 1 Handful Italian parsley
- Handfuls stolen mint leaves as needed
- 1 Pinch ground turmeric
- 1 Pinch ground coriander
- 1 Pinch ground cumin
- 1 Teaspoon smoked paprika
- 1 red chilli

Place the couscous into an insulated serving bowl and cover with the boiling water. Allow it to soak.

Meanwhile chop all the ingredients using scissors for the dried fruit, toast the walnuts and prepare the herbs etc.

Toss everything together once the couscous is fluffy and has absorbed all the water. Garnish with sliced chilli and that stolen mint.
