Fruity Layered Frozen Yoghurt Torte

Well it is the new year…we are all trying for at least a week or so aren’t we? I have to say, I am not that diligent when it comes to limiting my diet. Providing ideas to the very hungry thermo fans out there means I am always listening, always taking note of new menus or ideas that come my way. This one is via my son who is a bit of a foodie himself and was chatting about an idea he had either seen on Jamie Oliver’s show or site. (Which I had not looked up until just now when writing this article!) Jamie clearly uses banana for sweetness and a lot less yoghurt. But then he is probably tailoring the portion size to the average UK family…with 1.2 children as opposed to my rabid absolute mob! I have provided Australia with more than my fair share of tax payers…

The end result is very pretty and will make a great party dessert. Serve with lots of fresh berries.

Need

  • Mango Layer
  • 2 mangoes, flesh only
  • 250 g Greek yoghurt, honey
  • 1 tsp Vanilla - Bean Paste vanilla bean paste BUY
  • Blueberry Layer
  • 250 g blueberries, fresh or frozen
  • 250 g Greek yoghurt, honey
  • 1 tsp Vanilla - Bean Paste vanilla bean paste BUY
  • Avocado Lime Layer
  • 2 avocadoes
  • 200 g Greek yoghurt, honey
  • 2 limes, zest and juice
  • 2 tbsp NutraOrganics super greens + reds super greens and reds (optional, for colour) BUY
  • 50 g pure maple syrup
  • Raspberry Layer
  • 250 g raspberries, frozen
  • 250 g Greek yoghurt, honey
  • 1 tsp Vanilla - Bean Paste vanilla bean paste BUY
  • 50 g pure maple syrup

Do

1  

Line the base of a round spring form tin with baking paper. You could also use a straight sided loaf tin for this if you wished.

For each layer (choose any order you like) place all ingredients into Thermo bowl and blend 20-30 sec/speed 8 until well blended. Times will vary slightly with each layer depending on density of frozen berries etc.

Pour each layer in and freeze for at least 2 hours before proceeding with the next layer.

To serve, remove from tin and cut into slices.

I served it with whipped coconut cream, which I think is nice for a little creaminess as all but the Avocado layer is quite icy as opposed to creamy.

You may wish to add maple syrup to the other layers as this is not a sweet dessert. If you choose to use plain Greek yoghurt I would recommend adding it for sure.
