These are super flavourful and so simple to make. You really just need a good ice cream mould, some sticks and you are ready to freeze. Give them a couple of days in the freezer to be truly hard and then store them in airtight containers in the freezer until you dispense them at will. We suggest making a big stack to have ready for the summer season. We have added suggestions on ways to change them up, this is really such a simple base recipe, just add all the fruits and juices your kids love and the booze that you love (keep them separate!!) and you are ready to open an ice cream truck! They will keep well for up to 3 months.

- 150 Grams raw sugar
- 150 Grams water
- 500 Grams mango pieces (thawed if using frozen.)
- 80 Grams lime juice
- 10 Drops doTERRA lime oil BUY
- 50 Grams white rum (optional)

Place sugar and water into the Thermomix bowl and cook 8 min/100°C/ speed 1.

Add the mango to the Thermomix bowl.

Add lime juice and oil to the Thermomix bowl and blend 6 sec/speed 6 Add alcohol if using and blend 6 sec/speed 6.

Pour into moulds, freeze until slushy stage and then insert sticks. Freeze until completely hard.

Make it creamy by adding in some coconut cream or banana.

Make it tropical by adding passionfruit or pineapple pulp. (Blend it yourself before adding to the final mixture.)

Make it citrussy by adding citrus fruit juice of choice, we loved the lime, but orange and lemon are also really good! (Or all three)

The rum makes the freeze not as hard, this is good for adults of course.
