Hokey Pokey Ice Cream
Hokey Pokey ice cream is a New Zealand special and with the TM6 managing honeycomb with no issues, should be a simple flavour bomb for kids everywhere
If you love Killer Vanilla Ice Cream as much as we do, this will be so simple you will wonder why we are claiming it as a recipe. BUT, this does contain a non TM6 version of honeycomb which we hope you will try out if you are not a TM6 owner. Of course you can always use the TM6 honeycomb instead. But don't use all of it as it does make rather a lot. If you wanted the honeycomb colour with this version, then you should use golden syrup rather than honey.
It is slightly less brittle than the TM6 version of honeycomb but works perfectly with this recipe. (And isn't all that bad on its own tbh!)

Need
- Killer Vanilla Ice Cream partially frozen, ready to go Recipe
- 160 Grams raw caster sugar BUY
- 80 Grams honey
- 1 Tablespoon apple cider vinegar
- 2 Teaspoons bicarb soda, sifted

Place sugar, honey and vinegar into Thermomix bowl and cook 19 min/Varoma/speed 2.

Add sifted bicarb (avoiding the blades) and mix quickly with the spatula. (Using the one from my store is optimum as it will scrape everything together better.)

Quickly pour out onto a baking paper lined tray. Set in the freezer then shatter into pieces with the handle/back of a knife.

To make the Hokey Pokey Ice Cream: Use one batch of Killer Vanilla Ice Cream, frozen and softened. Stir the broken pieces of Hokey Pokey through. Return ice cream to the freezer for at least 30 minutes prior to serving.

Alternatively if you have the TM6, you can make the honeycomb recipe on cookidoo and then follow the above instructions. (Just don't use the whole batch of honeycomb as it is quite a lot!)
