Frozen mango pieces. Lime juice. Thermomix. Summer. Done.

The perfect flavoursome instant sorbet that I recommend you serve immediately after making as it freezes into quite a hard mass afterwards. You can lighten up the texture a little by adding an egg white or a dash of coconut cream if you wish.

Need

  • 300 Grams mango, frozen, in chunks
  • 2 limes, juice only

Do

Place the mango into Thermomix bowl and mill 10 sec/speed 10.

Add lime juice and continue to blend 1 min/speed 10 with the aid of the spatula, until creamy and aerated. You can insert the Butterfly at this stage which will definitely improve the aeration. Do not whip over speed 4 if using the Butterfly.

Serve immediately. This will re-freeze and become quite solid. Best made the day of service.
