Haloumi and Herby Watermelon Salad
A super fresh, super quick and super pretty addition to any of your entertaining summery meals this year. Use the best haloumi in the house, Eureka!

So when they asked me for another recipe for the award winning Eureka Haloumi, what could I do but jump at the chance. 'How can you go wrong with fried cheese?' I cried. You just can't!
So here is a super fresh, sooooo easy salad that will wow everyone, with the yin yang, sweet, salty and plenty of sex appeal. Enjoy.

Need
- 1 Kilo red watermelon, sliced
- 2 Handfuls rocket or salad leaves of choice
- Handfuls Coriander leaves
- Handfuls mint leaves
- 1-2 ripe avocado diced
- 1 Lebanese cucumber, sliced
- 300 Grams Eureka Haloumi (available in most IGA's)
- Extra Virgin Olive Oil (EVOO) to taste BUY
- balsamic vinegar or a few balsamic pearls

Slice the watermelon, (i suggest bite sized pieces or wedges) Arrange on top of rocket in a serving bowl.

Arrange the herbs over and all remaining ingredients except Haloumi.

Cook the Haloumi in a medium hot frying pan with a little EVOO until golden and toasty on both sides.

Add to the salad and then a drizzle more EVOO if desired and the balsamic pearls. (These are available from European Foods in Perth, but look for them in continental or specialty grocery stores.)
