This is the perfect salad to package up into small containers and take with you practically anywhere. Straight from Portable Lunches (Insiders you are all over that one!!) it can now be added to your Menu Builder. I am expecting big and very organised things for your lunches this year, as reluctantly we all get back into the swing of it. Is it just me or is anyone else feeling like Christmas/summer/holidays, came and went way too quickly? I am struggling to get back into the routine of life. Maybe I should retire. I can see me doing practically nothing on a beach somewhere...well, for two weeks maybe.

Place potatoes into TM simmering basket. Pour 500g water into Thermomix bowl and set simmering basket into position.

Place eggs into Varoma dish and set Varoma into position. Cook potatoes and eggs 13 min/Varoma/ speed 4. (Alternatively use the egg boiling mode set to hard on the TM6)

Meanwhile, top and tail green beans and place into Varoma tray. After potato and eggs have cooked for 13 min, place Varoma tray into Varoma dish and continue to cook for a further 7 min/Varoma/speed 4.

Immediately plunge eggs and green beans into an icy water bath to cool.

Check potatoes are cooked through by piercing with a fork. If not, cook for a further 3–5 min/Varoma/speed 4.

Sprinkle the hot potatoes with olive oil and pink salt flakes.

Assemble the salad in individual bowls or as one large salad with potatoes, green beans, peeled and quartered boiled eggs, rocket, tomatoes, sliced onion, olives, capers and finishing with the tuna on top. Drizzle with a little EVOO.

Optional, serve with plenty of Easy Thermomix Mayonnaise. Add cucumber or any other desired salad ingredient.

This salad is delicious served warm or cold and the individual components will store well in the fridge for several days.
