Kefir Overnight Oats with Chocolate & Almonds, a Healthy Gut-Friendly Breakfast

Overnight oats just got an upgrade. Fermented kefir brings a tangy probiotic punch, while dark chocolate and roasted almonds add indulgent texture and flavour. This is a weekday breakfast that feels like dessert but fuels like health food. It's easy to prep the night before and even easier to fall in love with. Why Fermented Foods?

Place all oats ingredients into the Thermomix bowl and stir 5 sec/speed 5.

Place into 2 jars with a lid and set on the bench for a few hours.

Divide the yoghurt of choice between the two jars and make an even layer on top of the oats, about 2cm thick.

Eat immediately!

Optional Place the chocolate and coconut oil into a ziploc bag and insert into the simmering basket. Fill the Thermomix bowl with 500g water.

Warm the chocolate 6 min/Varoma/speed 1. Allow the chocolate to sit inside the Thermomix bowl until completely melted. Snip one corner off the bag and spread equally across the two jars. Decorate with the almonds.

These will be ready to eat within a few hours, but best left overnight (thus the name!) and will be a little fermented if left out of the fridge.
