Mint Vanilla Lemonade

Pretty lemonade never goes astray and especially when it is this quick to pull together at a moments notice. You and the family will love this one.

Relax on a summer afternoon with this refreshing, unique blend of flavours -- lemon, mint and vanilla! Super quick to whip up, and really pretty as well as being a bit more elegant than your usual homemade lemonade, get onto it. Fragrant, cooling and mum friendly! (Go ahead, add vodka or gin, it's allowed!)

Place sugar, lemons and mint into Thermomix bowl and chop 3 sec/speed 5.

Add 1 litre water and stir gently 10 sec/Reverse/speed 2.

Strain mixture well into a 2 litre jug, reserving solids.

Return solids to Thermomix bowl and add another litre of water. Stir 10 sec/Reverse/speed 2.

Strain and add to first amount of liquid. Stir through the vanilla bean paste using a silicone spatula.

Dilute further to taste and serve over ice.

You can use sparkling mineral water for some of the water amount, but not all of it as it will fizz up and spill over the rim of the TMbowl.

Garnish with ½ a vanilla bean per glass if desired.
