Peppermint Vanilla Thumbprints

Need
- 100 Grams cream cheese
- 450 Grams icing sugar, plus some more
- 2 Teaspoons vanilla bean paste vanilla bean paste BUY
- 10 doTERRA Peppermint Oil drops doTERRA pure peppermint oil BUY
- 100 Grams chocolate dark chocolate BUY

Place cream cheese, icing sugar, vanilla and peppermint oil into Thermomix bowl and blend 6 sec/speed 8. (Add more sugar at this point if mixture is not pinching together and holding shape.)

Roll mixture into small balls and place onto a lined tray that will fit into your fridge. Do a few at a time, and press your thumb (or finger) into the centre of the ball to create a small hollow.

Refrigerate for several hours until quite firm.

Place chocolate into a plastic Ziploc bag and melt in the microwave on high for 1 minute. Massage the bag so that all the chocolate is melted.

Snip off one teeny corner of the bag and use that as your icing tip to squeeze a little chocolate dollop into the centre of each of the mints. Allow to set at room temperature so as not to ‘bloom’ the chocolate.

Refrigerate and serve as after dinner mints, or use as gifts.
