Another delicious offering from guest blogger Fiona at Food 4 Thought. AND IT’S PALEO kids...fabulous. I do love a good curry and just quietly it’s not that often you see pork and curry in the one title.
Not so worried about the paleo bit, you kinda had me at curry!

- 4 cloves garlic
- 100 g red onion
- 50 g lemongrass, cut into 1cm pieces
- Zest of 1 lime
- 20 g coriander root
- 1/2 tsp shrimp paste
- 1 kaffir lime leaf
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/2 tsp cumin
- 1/2 tsp dried chilli flakes
- 20 g olive oil
- 100 g water
- 500 g pork loin, cut into 3cm pieces
- 300 g eggplant, cut into 2cm pieces
- 200 g coconut milk
- 30 g fish sauce
- 30 g honey or coconut sugar
Place all paste ingredients into TM bowl and blend 30 sec/speed 7.
Scrape around the sides of the bowl and repeat.
Scrape around the sides of the bowl then cook 5 min/100°C/speed 1.5.
Add pork to TM bowl with the paste and cook 3 min/100°C/Reverse/speed soft.
Add eggplant and coconut milk. Cook 50 min/90°C/Reverse/speed soft.
Add fish sauce and coconut sugar then cook for another 10 min/90°C/Reverse/speed soft.
Squeeze over some lime juice and serve with cauliflower rice or side dish of your choice.
