- 4 cloves garlic
- 100 Grams red onion
- 50 Grams lemongrass, cut into 1cm pieces
- Zest of 1 lime
- 20 Grams coriander root
- 1/2 Teaspoon shrimp paste
- 1 kaffir lime leaf
- 1 Teaspoon paprika
- 1/2 Teaspoon turmeric
- 1/2 Teaspoon cumin
- 1/2 Teaspoon dried chilli flakes
- 20 Grams olive oil
- 100 Grams water
- 500 Grams pork loin, cut into 3cm pieces
- 300 Grams eggplant, cut into 2cm pieces
- 200 Grams coconut milk
- 30 Grams fish sauce
- 30 Grams honey or coconut sugar
Place all paste ingredients into Thermomix bowl and blend 30 sec/speed 7.
Scrape around the sides of the bowl and repeat.
Scrape around the sides of the bowl then cook 5 min/100°C/speed 1.5.
Add pork to Thermomix bowl with the paste and cook 3 min/100°C/Reverse/speed soft.
Add eggplant and coconut milk. Cook 50 min/90°C/Reverse/speed soft.
Add fish sauce and coconut sugar then cook for another 10 min/90°C/Reverse/speed soft.
Squeeze over some lime juice and serve with cauliflower rice or side dish of your choice.
