If you’ve never cooked pork scotch fillet sous vide in the Thermomix, prepare to fall in love. This method delivers unbelievably juicy, tender pork with edge-to-edge perfection every single time. Finished with a quick sear for colour and flavour, it’s the kind of meal that feels restaurant-worthy but is surprisingly simple to pull together at home.

The grilled pineapple slaw brings brightness, crunch and a little smoky sweetness that pairs beautifully with the rich pork, though honestly, this versatile dish works with almost any slaw you love. Think creamy cabbage slaw, spicy Asian-style slaw, apple fennel slaw or even a punchy herb salad. It’s easy entertaining with maximum impact and minimal stress.

Place pork, salt, pepper and thyme into a stasher bag or vacumn sealed bag.

Fill Thermomix bowl with water up to the 1 litre mark. Place stasher bag in the steaming basket and put it in the Thermomix bowl.

Sous Vide 1 hour/70°C/speed 1.

Fry pork in EVOO until nicely browned.

Serve sliced with lime cheeks and a slaw of some sort, we especially love the Grilled Pineapple slaw.
