Pork Filled Savoury Pancakes

I just LOVE this recipe. They are seriously delicious. So simple and so quick. The longest part of the recipe is whipping up the crepes...and how hard is that? (Not very!)
There's something incredibly comforting about a golden savoury pancake wrapped around a rich, flavour-packed pork filling. Think of it as the love child of a crêpe and a hearty pie, soft, tender pancakes hugging a savoury mince (use beef or chicken if you prefer) that's been gently cooked until deliciously moreish. It's an easy weeknight dinner that feels just a little bit special and is perfect for using simple pantry staples to create something seriously satisfying.
Serving Suggestions
Serve with a crisp green salad dressed with a sharp Dijon vinaigrette to cut through the richness.
Pair with buttery mashed potatoes or creamy potato purée for the ultimate comfort meal.
Add steamed green beans, broccolini or asparagus for freshness and colour.
Spoon over a little warmed gravy or a creamy mustard sauce for extra indulgence.
Finish with a sprinkle of chopped parsley, chives or dill and a little grated Parmesan if you like.

Need
- 2 cloves garlic
- 50 Grams fresh ginger
- 1 red chilli
- 20 Grams Extra Virgin Olive Oil (EVOO) BUY
- 500 Grams pork mince
- 1 Tablespoon fish sauce
- 50-80 Grams fresh lemon juice
- Sweet Chilli Sauce to serve Recipe
- 1 Batch Savoury Crepes Recipe

Place garlic, ginger, chilli and EVOO into Thermomix bowl and chop 6 sec/speed 5.

Scrape down sides of bowl. Saute 5 min/Varoma/speed 1/MC off.

Add pork and fish sauce. Cook 10 min/Varoma/Reverse/Speed Soft.

Add juice and stir through 3 sec/speed 1.

Wrap in Savoury Pancakes and with sweet chilli sauce on the side.

Serve with a green salad or steamed veggies.
