I first experienced this in the USA, nothing to do with Italy. But they originated in Italy and we have several versions of different flavours on here. This recipe appears in Keeping it Simple. This is one of the soda syrups and although the weather is cold down under at the time of posting, we know it is hot up there in Italy where we all wish we were travelling to! Channel some Italian blue sky as you sip on this one! Enjoy.

Place all ingredients into Thermomix bowl and cook 8 min/90°C/speed 1.

Allow to infuse in Thermomix bowl for at least 30 minutes before removing vanilla pods.

Store in sterilised airtight jar in fridge until use.

You can leave the vanilla pods in the jar as this is not only pretty but will continue to release flavour.

5  

To serve, drizzle a little of the syrup around a glass, fill it with ice, soda water, a splash of cream and if you must, some ice cream.
