I just got back from California recently and of course, we all trucked off to Venice Beach for the usual pics for social media; but also to visit, (and eat) don't get me wrong. It is kind of a great place to go for what is happening in food in LA. All along the boardwalk are Poke Bowl restaurants. And be warned, you can get Poke Bowl horribly wrong. (I think we have got it deliriously right of course).
Anyway, I got inspired and here is the result of that inspo. Not just one recipe though, a Poke Bowl Chart...an Ultimate Poke Bowl Chart no less! The Bowl
- 250 Grams sashimi grade salmon or tuna, diced
- 1/2 Pineapple-fresh diced
- 30g brown rice per serving
- water for steaming rice
- 1-2 avocado peeled and sliced or diced
- 1 small cucumber, diced
- 1 Handful fresh coriander or cilantro
- a few sliced pickled ginger per serving
- Nori or other seaweed, shredded
- Handfuls shredded coconut
- a few wasabi peas
- 1 red chilli sliced for garnish
- black sesame seeds to garnish
- 1 Batch dressing to taste

Dressing
- 40 Grams miso (dark) OR
- 40 Grams soy sauce
- 20 Grams sesame oil
- 2 Tablespoons mirin
- 20 Grams fresh lemon juice
- 2-3 Tablespoons Easy Thermomix mayonnaise Recipe
- 2-3 cloves garlic

Make the dressing by choosing at least 4 of the ingredients and blending 10 sec/speed 10. You should choose an acid, a fat, some flavouring and a salty ingredient.

Dice everything as instructed. Toss the salmon or tuna in some of the dressing and set aside in the fridge while you prepare the rest.

Steam the rice by placing into the simmering basket. Rinse the water for steaming over the tip and into the Thermomix bowl. Steam rice 30 min/100°C/speed 4. Cool.

Prep everything into small bowls and allow people to serve themselves. Otherwise assemble bowls starting with rice, and adding everything else on top.

Sprinkle with garnishes and drizzle with any remaining dressing or mayonnaise.
