Need
- 1 Pineapple-fresh peeled, cored and sliced into rings
- 80 Grams plain flour BUY
- 2 eggs, lightly whisked
- 100 Grams panko bread crumbs
- 1 Tablespoon raw caster sugar BUY
- Extra Virgin Olive Oil (EVOO) BUY

Preheat air fryer to 200°C.

Place flour in 1 bowl, egg in another and mix panko and sugar in a third bowl.

Dip pineapple rings in flour, then egg, then panko.

Drizzle generously with EVOO and place 2 or 3 into the air fryer, depending on its size.

Cook for 10-12 minutes. Turning over half way. Serve with ice cream, cream or yoghurt if you are doing the breakfast thing!
