Apple Cakes With Caramel Sauce

Need

  • Cake
  • 110 Grams sugar
  • 120 Grams Butter cubed
  • 2 eggs
  • 150 Grams flour
  • 2 Teaspoons baking powder
  • 1 Tablespoon milk
  • 2 Granny Smith apples
  • 2 Tablespoons apricot jam
  • Sauce
  • 60 Grams brandy
  • 120 Grams cream
  • 100 Grams Unsalted Butter
  • 100 Grams brown sugar

Do

1  

Preheat
 oven to 160ºC. Butter an 8 hole mini loaf tin and set aside.

Place
 sugar into Thermomix bowl and mill 10 sec/speed 10.

3  

Add 
butter and mix 1 min/speed 3. Scrape down sides of bowl.

4  

Add 
eggs, flour, baking powder and milk and mix 10 
sec/speed 6.

5  

Scrape
 down sides of bowl and mix 5 sec/speed 5 if necessary.

6  

Divide 
cake batter between holes and smooth surfaces with the back of a wet spoon.

7  

Peel 
and quarter apples. Thinly slice each quarter and arrange on top of each cake.

Brush with warmed apricot jam and bake for 30-35 minutes or until risen and 
skewer comes out clean.

9  

Sauce; place
 all ingredients into Thermomix bowl and cook 7
 min/Varoma/speed 3, with MC off.Blend
 5 sec/speed 6.

More

Drizzle cake with Caramel brandy sauce and whipped cream. Serve Warm.
