Caramelised Onion and Cheddar Dip
I happened to buy something similar to this from European Foods in their very amazing Cheese Cathedral (if you ever get there you will understand what I am on about!) and it was immediately on my radar to create a version of my own. It is amazing. I am not one for onions on hot dogs, or burgers or cheese for that matter, but this is so good. I have some in my fridge right now and it may end up being part of lunch. Serve this with loads of crackers (hopefully from the amazing collection we have on this site!)

The Caramelised Onion
- 1 cloves garlic
- 500 Grams red onion peeled and sliced thickly, about 1/2 cm thick.
- 50 Grams coconut sugar
- 50 Grams balsamic vinegar
- 2 Pinches pink salt flakes BUY
- 20 Grams Extra Virgin Olive Oil (EVOO) BUY

The Rest
- 120 Grams mature cheddar cheese cubed
- 60 Grams parmesan cheese cubed
- 80 Grams cream cheese

To make the caramelised onion, place the garlic into the Thermomix bowl and chop 2 sec/speed 5.

Add all remaining onion ingredients and cook 50 min/Varoma/Reverse/speed soft. Remove from the Thermomix bowl and cool.

Without cleaning place the cheddar and parmesan into the Thermomix bowl and mill 10 sec/speed 10.

Add cream cheese and combine 20 sec/speed 5.

Add half of the caramelised onion and combine 20 sec/speed 5.

To serve, spoon into a bowl and top with a little of the excess caramelised onion.

Refrigerate until use. Serve with toasted bread of choice or crackers or as part of a cheeseboard or grazing table.

Use the remaining caramelised onion in omelettes, on toast, on meat as a relish or with cheeses.
