I love cherries, anyway they come. I always have. I love the slight almondy bitterness of a sour cherry, I love the bitterness of a maraschino cherry, with or without the drink to go with it, and I love fresh cherries any way I can get them. When I was at university in the USA my friends mother had a massive cherry tree and we were the chief cherry pickers!! Those cherries are still in my memory and are the cherries by which all others are judged and sadly fall short! They were the size of small plums. I would have climbed any tree to get them...and we did. I gorged on cherries many a day in those years!

They are extremely expensive to buy where I live, but when you can get them at a good price, MAKE THIS JAM...it will keep indefinitely. Then go and make the Cherry Streusel Scones

Need

  • 500 Gram whole cherries with pits (or not, up to you)
  • 1 lemon, quartered with pips
  • 250 Grams golden caster sugar
  • 1 green apple, quartered, skin and pips included

Do

Place all ingredients into Thermomix bowl and cook for 60 min/100ºC/Reverse/speed 2/MC off but use the simmering basket on the lid to prevent spattering.

Strain jam through a sieve to remove pits and lemon rind etc.

Return to the Thermomix bowl and cook a further 20 min/Varoma/Reverse/speed 1/MC off but use the simmering basket on the lid to prevent spattering. Test the jam has a good consistency by placing a spoonful onto a cold plate. It should set quite quickly.

Store in sterilised glass jars in the fridge (once cooled).
