I AM IN LOVE with Sicily and its amazing food. This recipe is part of the Arancini, with Ham, Pistachio and Cheese recipe that I did eat versions of throughout Sicily. Obsessed with this savoury pistachio pesto of sorts, you must try it!

I made this with the idea that it would still be slightly sweet from the pistachios, so no salt has been added. I LOVE it. I have been eating it with a spoon....oops. I did have enough to make 6 arancini though. So it does make a fair bit. Keep it in the fridge and dip into it as you require. 

Here are a few ideas to use this stuff...if you needed inspiration! 

Spread on crostini or bruschetta for an elegant appetizer

Toss with pasta for a Sicilian-inspired main dish

Use as a topping for grilled chicken or fish

Stir into risotto for a creamy, nutty finish

Mix with roasted vegetables for added flavor

Add to a charcuterie board as a unique dip

Use as a filling for savoury pastries or hand pies

Swirl into soups for a hint of richness and depth

Combine with goat cheese or ricotta for a creamy spread

Top a pizza with it for a twist on traditional pesto

Serve alongside lamb or beef for a Mediterranean flair

Drizzle over roasted potatoes or other root vegetables

Add to a sandwich or wrap for an extra layer of flavor

Use as a base layer on a savoury tart with vegetables or cheese

Stir into scrambled eggs or omelets for a nutty boost

Place parmesan and garlic into the Thermomix bowl and mill 810 sec/speed 10*.

Add pistachios and blend 30 sec/speed 8.

Add EVOO and blend 10 sec/speed 8. Scrape into a container and refrigerate until use.

You may need to give it a stir before using as sometimes the oil will separate.
