Golden Gnocchi Caprese Wreath
A festive gnocchi Caprese wreath with creamy polenta gnocchi, confit tomatoes and homemade bocconcini, if you dare, the ultimate summer showstopper.
This is less of a recipe, in that most of the ingredients are other recipes, and more of a serving suggestion. You don't need to make this as a wreath of course, it is equally spectacular just tossed together on a large plate, but #tistheseason (at the time of publishing) so we went with a wreath!
Meet your new crowd-pleasing Christmas centrepiece: a warm, golden wreath of pillowy polenta gnocchi dressed with slow-blushed confit tomatoes, finished with bocconcini (homemade, if you’re feeling fancy) and fresh basil. It’s Italian comfort with an Aussie-summer twist, light, tomato-forward, colourful and perfect for sharing.
You can premake the components, then serve a spectacular holiday dish without the holiday stress. Think Caprese meets Christmas… and yes, it’s absolutely delicious.

Need
- 1 Batch Crunchy Cheesey Croutons or other crunchy croutons Recipe
- fresh baby spinach leaves
- 1/2 Batch Polenta Gnocchi (freeze the other half for a lazy new year dish!) Recipe
- 1/4 Batch Confit Cherry Tomatoes Recipe
- 1 Batch Thermomix Bocconcini or small container purchased bocconcini Recipe
- 1 red onion
- juice 1 limes
- pink salt flakes to taste BUY
- Extra Virgin Olive Oil (EVOO) to dress the salad BUY
- plenty basil fresh leaves, we used purple and regular sweet basil which is what I have growing

Premake the ingredients as listed. You should make the gnocchi last if you want it to be hot. It needs to be pan fried, and it is amazing when freshly cooked. It still works cold, but is much nicer when straight from the pan.

Make a quick pickle with the sliced red onion, lime juice and salt while you get everything else ready.

Arrange all of the ingredients onto a large platter in the order listed. Serve!
