Fluffy, tangy, and full of gut-loving goodness, your new breakfast staple has arrived.
Meet your next breakfast obsession! Kefir Crumpets. Light, bubbly, and ever so slightly tangy, these beauties are a delicious way to bring fermented goodness into your morning routine. Using homemade kefir as the base gives them a depth of flavour and a hit of probiotics that your gut will love. Toasted to golden perfection and slathered with butter or honey or both, they’re a wholesome twist on a comforting classic, and proof that fermentation can be as delicious as it is good for you.
These freeze really well and then just pop them in the toaster straight from frozen, though they will take a bit longer obviously. We absolutely loved these...you will too.

Need
- 2 Teaspoons dry active yeast
- 300 Grams bakers or strong flour BUY
- 400 Grams Milk Kefir Recipe
- Pinches pink salt flakes BUY
- 1 Tablespoon raw caster sugar BUY
- 2 Teaspoons baking powder
- butter for frying BUY

Place yeast and 2 tbsp in a small bowl. Stir to combine. Set aside.

Place flour, kefir and salt into Thermomix bowl and insert Butterfly. Whisk 1 min/Butterfly/speed 3.

Add the hydrated yeast, sugar and baking powder. Whisk 1 min/Butterfly/speed 3.

Pour batter into a large bowl. Cover and rest in a warm spot for 1 hour or until mixture is nice and bubbly.

Heat pan over low-medium heat. Grease egg rings with butter very well (or any metal rings).

Grease the pan with butter. Place rings in the pan (as many as will fit).

Pour 1/4 cup of batter into the rings. They will take at least 5 minutes. Once bubbles have formed and popped and the crumpet is starting to come away from the ring, pull the ring off.

Turn crumpet over to lightly brown the other side.

Repeat until all batter is used.

Toast and eat with toppings of choice as you would any other crumpet, except these are way better!
