Mango Coconut Nice Cream
Totally dairy free ice cream never tasted so good, or was so good for you! It's never not the season for Mango Coconut (with those yummy little flecks of vanilla) nice cream!! Enjoy.

- 2 400ml tins Coconut Cream Recipe
- 160 Grams golden caster sugar
- 2 Teaspoons Vanilla Bean Paste BUY
- 4 egg yolks
- Flesh 2 mangoes (300g minimum)
Place coconut cream, sugar, vanilla and yolks into Thermomix bowl and cook 8 min/80°C/speed 3.
Cook a further 2 min/90°C/speed 3.
Cool completely before freezing in flat tray for 4 hours or overnight.
Cut into chunks and return to Thermomix bowl with mangoes.
Blend 1.5 min/speed 10.
Return to freezer for 4 hours.
