Fried Ice Cream Parcels
An easy, crispy, golden parcel with a melty surprise inside—made in the airfryer, no deep-frying needed!
This is the kind of dessert that feels like magic: crunchy on the outside, cold and creamy on the inside. These Fried Ice Cream Parcels are the ultimate treat—easy to assemble, quick to cook in the airfryer, and perfect for impressing guests (or just yourself). No messy deep-frying involved, just your favourite ice cream, a few pantry staples, and a bit of freezer time. This is the dessert hack you didn’t know you needed.
This is a little bit impressive, and if you are clever, you will try it out purely for quality control and a bit of fun, before you serve it to guests. The parcels can be premade well in advance then cooked on demand. We have some in our freezer now. You can replace hazelnuts with any nuts, or use any flavoured ice cream. Sorbet is not an option however. Enjoy the magic.

Need
- Killer Vanilla Ice Cream or ice cream of choice Recipe
- 50 Grams nuts of choice, roasted
- 1 sheet of filo pastry per serving
- butter melted, as needed BUY
- 200 Grams chocolate melted and slightly cooled BUY

Using 1 scoop per serving, scoop as many scoops of the ice cream as you plan to make and place onto a tray in the freezer overnight or for a few hours until it is really solid.

Place the roasted nuts into the Thermomix bowl and mill 5 sec/speed 6. Set aside.

Lay the filo on a board one sheet at a time and brush liberally with melted butter. Fold in half so you have a double layer of pastry. Brush with more butter.

Spread some melted chocolate over the centre of the piece of buttered pastry and sprinkle with 2 tsp milled hazelnuts. Place one scoop of ice cream on top and bring the sides of the pastry up to meet in the centre enclosing the ice cream in a little parcel. Brush with more butter and return to the freezer for 24 hours. Repeat to create as many servings as you will need.

On the day you will serve them, preheat the air fryer to 200°C/10 minutes.

Using a pair of tongs, place one parcel into the air fryer and cook 4 min/200°C. Remove immediately and drizzle with additional melted chocolate and sprinkle with a few more nuts. Serve immediately. Repeat to order.

Note; The whole idea of the chocolate and nuts inside the pastry is to create an insulation for the ice cream against the heat. There may be leakage if you break the pastry in any place at all, so be very careful when wrapping or moving the parcels into the air fryer. Don't skimp on the prep time in the freezer, this will ensure your success.
