No brain freeze here. Simple, fragrant, delicious, easy, did I tempt you yet? When there is a glut of mangoes, get freezing, then whipping. DONE.

Straight from the pages of Keeping it Simple...(go get it here) this very easy recipe was so easy we made a Turbo video out of it. I hope you are keeping up with those every Sunday over on Facebook. I made this for the recent Convenient Vegetarian cooking classes as well and it can quite easily be doubled, though chopping and whipping times may increase somewhat. I had a recent glut of amazing tree ripened mangoes, and froze them in cubes....then made this. NOT kidding, was completely amazing. Fresh tree ripened mangoes are sooo much better than anything else out there that is available. So if you get the chance any summer, do it. Of course, need I remind you this recipe is dairy free, sugar free and gluten free...a triple whammy without any sacrifice on taste. Enjoy.

Place mango into Thermomix bowl and chop 10 sec/speed 8.

Blend 30 sec/speed 6.

Add remaining ingredients and whip 20-30 sec/Butterfly/speed 4. Serve immediately.
