Naturally Dyed Easter Eggs

I tried to source white shelled eggs, but impossible to find at the moment. The color of an eggshell, whether white or brown, is determined by the breed of the hen, with different breeds producing different pigments that deposit on the shell as it forms in the hen's oviduct. I am guessing that where I live we only have brown shelled laying hens. I did find some paler eggshells and might have been caught swapping the paler eggs into one carton! 

In general the tips I have for you here will give you a great result. 

Hard boiling your eggs (twice) is essential. If you don't have the TM6 (or TM7!!) then you will have to boil the eggs however you normally do, but make sure they have had at least 30 minutes in the boiling water.

Because I have the TM6 I used the egg boiling function to make the dyes while I cooked the eggs. You don't have to do it all in one process, but you can. 

Double or triple dipping the eggs after drying between soaks, gives you a totally different colour than soaking for longer. I had better results with some colours than others. I didn't do the rosella tea or the beetroot. I also didn't do the cabbage on its own, which I should have. 

You also get totally different results by double dipping in different colours, rather than trying to combine the elements into one dye. For example, I made a purple cabbage and turmeric dye, but it basically was a brighter yellow than the straight turmeric version without any of the purple coming through. By the time I discovered that I had run out of eggs!

All in all, I got a bit worried early on, but then once I soaked them more than once I was pretty happy with my little bowl of eggs. Have fun, get the kids involved and Hoppy Easter 2025!

 

 

Need

  • 12 eggs see notes about the colour of the shells
  • water as needed for cooking
  • white vinegar as needed
  • Extra Virgin Olive Oil (EVOO) as needed for polishing BUY
  • Colour options
  • 4-5 red onion skins only
  • 2 Cups purple cabbage, shredded
  • 1/4 Cup ground turmeric
  • 100 Grams raw beetroot, shredded
  • 1/2 Cup frozen blueberries
  • 3 Tablespoons butterfly pea flowers (tea)
  • 1 Cup dried rosella flowers (tea)

If using the TM6 egg boiling function, choose your dye colour ingredients and add to the Thermomix bowl first with enough water to JUST cover your eggs. I only did 2 at a time as I wanted all the colours.

Chop the ingredients with the water for 6 sec/speed 6.

Add the eggs and process them using the hard boiled setting twice. Add the vinegar at the end, about 2 tsp per cup of water. This sets the colour.

Remove the eggs carefully and pour your dye into a large enough jar to hold however many eggs you are making. Add the eggs and cover. Allow the dye to cool as the eggs both continue to cook and dye!

Remove the eggs and dry them, then repeat with as many different combos as you wish.

When the dyes have cooled, remove the eggs and dry them with a paper towel, or let them air dry naturally. You will have some of the dye come off.

Dip or soak them again. And up to as many times as you like until you are happy with the results.

Air dry them fully.

Pour a little EVOO onto a paper towel or soft cloth, and polish each egg.

Display as you wish! (Keep them in the fridge at night, or in the lead up to Easter) as much as possible. They should be fine, but I have no evidence yet of them being OK for a long period of time.

IF you don't have the TM6 you can still make these dyes in the Thermomix. Just leave the eggs out of the process and dip them afterwards.

To make the dyes, add the dye ingredients to the Thermomix bowl with 4 cups water and chop the ingredients with the water for 6 sec/speed 6.

Cook 20 min/100°C/reverse/speed 2. Proceed as directed above, placing hot boiled eggs into the hot dye.

Then continue as per remainder of recipe above.
