Need

  • 2-3 green apples, quartered
  • 2 cinnamon stick(s)
  • 4-5 cloves
  • 2 cardamom pods
  • 1 Teaspoon Szechuan peppers
  • 50 Grams raisins or frozen cranberries
  • 2 sprigs fresh rosemary
  • 2-3 fresh bay leaves
  • 1 star anise
  • 1 vanilla bean, cut in pieces
  • 1 lemon, sliced
  • 1 orange, sliced
  • A few pomegranate seeds
  • Enough water to bring liquid in bowl to 1.75L mark

Place all ingredients into Thermomix bowl and cook 30 min/80°C/Reverse/speed 1/MC off.

You should have a heady aroma throughout your kitchen when cooking this. If you want to continue (and you don’t need your TM for another Christmix job), check water levels and cook again as needed. You can store cooled cooked mixture in a jar in the fridge and just return it to Thermomix bowl with more water as required for Christmix on demand!

This can also be simmered for literally hours on a cooktop on a very low heat. Just check the water levels occasionally and give it a stir.
