When Christmas in Australia means sunshine and the beach, a chilled chai-spiced eggnog is the perfect festive drink if not a little decadent! This creamy, refreshing blend of classic eggnog with a our favourite Prana chai, vanilla and honey is made effortlessly in the Thermomix. It’s the ideal way to celebrate the season while keeping cool—perfect for entertaining or simply enjoying as a poolside Christmas milkshake of sorts. You can easily make it dairy free by swapping out the milk and cream for the coconut versions of both.

You can also add alcohol or not. Up to you and who you are serving it to!

Place Prana Chai mix and the milk into the Thermomix bowl and heat 10 min/70°C/speed 1. Allow to infuse in the bowl for at least 10 minutes, longer if you have the time.

Stir 30 sec/speed 3. Strain out solids and rinse the bowl. Return the chai milk to the Thermomix bowl.

Add honey, vanilla and eggs and cook 8 min/80°C/speed 4. Blend 10 sec/speed 6.

Scrape custard into a bowl or jug and cover with a cartouche. When it has reached room temperature, place into the fridge for up to 48 hours.

When ready to finish the nog, pour cream into the Thermomix bowl and add a dash of alcohol of choice (rum, whisky or brandy is traditional). Whip 20 sec/butterfly/speed 4 or until soft peaks form. Remove butterfly and add the cold eggnog custard. Combine 10 sec/dough setting or Interval.

Serve in pretty glasses, sprinkled with the Festive Gingerbread Spice or some cinnamon.
