Peaches and Cream Ice Cream
This fruity, creamy dessert, will transport you back to a gentler time of spending a summer afternoon on the porch swing and gazing at dappled sunshine through the trees. If that ever happened to you of course. It didn't happen to me, but I do love the idea of it! There is something iconically country about homemade peach ice cream. Peaches in season could be the best thing you ever taste. So make sure you get those peaches. Slightly softer than for eating works well!
You could roast the peaches, this will enhance the flavour even more. It is up to you. Place the prepped peaches onto a lined tray and into an oven set to 180°C for about 20 minutes. Cool slightly before blending and proceeding as directed.

Need
- 800 Grams ripe peaches, pitted and halved
- 150 Grams honey
- 2 Tablespoons lemon juice
- 2 Teaspoons vanilla bean paste BUY
- 50-100 Grams pure cream

Place peaches, honey and lemon juice into Thermomix bowl and chop 10 sec/speed 5.

Cook 15 min/100ºC/speed 2.

Blend 30 sec/speed 8.

Pour puree into a lined metal slice tray and freeze.

Once frozen, cut puree into ice cube sized pieces, place into Thermomix bowl and blend 10 sec/speed 8.

Add vanilla and cream and blend a further 30-60 sec/speed 8 or until smooth and creamy, scraping down the sides of the bowl as needed.

Serve immediately.
