Well hello yellow. Rice that is. A beautiful side dish with all the vibrancy of turmeric and of course some of the benefits as well, go and read all about the wonders of turmeric here. Add the saffron threads and it’s more than beautiful, you can be transported to Sri Lanka or somewhere equally exotic. Am I right? (I know...it’s just rice for crying out loud, but give me a break, I’m trying to make it exciting for you.)

Place rice into simmering basket. Stir though saffron threads, turmeric and salt with a fork. Insert into Thermomix bowl.

Pour the water over the top until you can just see it when tipping the Thermomix bowl on an angle.

Steam 14 min/100°C/speed 4.

Fluff rice with a fork and serve with the chopped mint and chillies.
