Thermomix Thai Fish Cakes

We have cooked the fish and potatoes together here, but you can certainly replace either with leftovers as mentioned. A great way to cook once and eat twice!

- 500 Grams white fish filet, cut into cubes
- 350 Grams peeled potatoes, cubed
- 80 Grams parmesan cheese cubed
- 1 shallot peeled and halved
- 2 cloves garlic
- 1 lemons zest, finely grated
- Handfuls fresh chives
- 1 Tablespoon Yellow Mustard Recipe
- 2 eggs
- pink salt flakes and pepper to taste BUY
- 80 Grams fresh lemon juice
- 200 Grams panko breadcrumbs
- 50 Grams Extra Virgin Olive Oil (EVOO) or as needed for frying BUY

Fill Thermomix bowl with water to the 1 litre mark. Place potatoes into the Varoma dish and the fish into the Varoma tray. Steam 30 min/Varoma/speed 3. Set aside. Discard water.

Place parmesan into the Thermomix bowl. Chop 10 sec/speed 10. Set aside.

Place shallot, garlic, lemon zest and chives into the Thermomix bowl. Chop 3 sec/speed 7.

Add mustard, egg, seasoning, lemon juice, grated parmesan and the cooked fish and potatoes. Combine 10 sec/Reverse/speed 4.

Shape mixture with your hands to form balls, coat in the panko breadcrumbs.

Heat EVOO in a pan and fry for 3 minutes each side, or until golden.
