Chilli Con Carne

Need
- 1 brown onion peeled and quartered
- 4 cloves garlic
- 30 Grams Extra Virgin Olive Oil (EVOO) BUY
- 2 Tablespoons chipotle chilli in adobo sauce
- 1 Teaspoon ground cinnamon
- 1 Teaspoon ground cumin
- 1/2 Teaspoon cayenne pepper
- 1/2 Teaspoon allspice
- 1 bay leaf fresh or dried
- 400 Grams Marinara Sauce Recipe
- 200 Grams water
- 2 Tablespoons apple cider vinegar
- 2 Tablespoons Worcestershire Sauce Recipe
- 2 Tablespoons cocoa powder BUY
- Pinches pink salt flakes BUY
- 1 Tablespoon raw caster sugar BUY
- 1 Kilo minced beef
- 1 Tin kidney beans
- fresh coriander, chopped avocado, sour cream, grated cheese, roasted cherry tomatoes to garnish

Place onion and garlic into the Thermomix bowl and chop 3 seconds/speed 5 Scrape down sides of bowl, add oil and cook 5 minutes/Varoma/speed 1. Add adobo chilli and spices And cook 3 min/Varoma/speed 1.

Add remaining ingredients (apart from beef mince and beans) to the Thermomix bowl.

Break up mince and place onto the tray and base of the Varoma. Place Varoma into position and cook 20 minutes/Varoma/ speed 1.

Insert Butterfly. Carefully add mince to the Thermomix bowl (scrape meat juices from the Varoma lid into the Thermomix bowl). cook a further 10 minutes/100°C/Butterfly/ speed 1. Add beans and cook 8 min/Varoma/Butterfly/speed soft.
