Sliders anyone? This delicious version will be your go to from now on. Don't just stop with sliders, go full burger bun if you wish!

Fluffy buns are some of my best work! I mean, who doesn't want fluffy buns? When I started with Thermomix Australia as recipe developer back in the dark ages before pictures on recipes were even a thing, I got a lot of emails about bread recipes. This is a version of a version of a version of something I did when developing the Taste of Asia cookbook. The roux is some of the magic and so is the coconut milk. I know you’’ll love them!

You don't have to just make this dough into sliders of course. We have numerous reasons and recipes to make them into full hamburger buns. Think about any or all of these fillings then run wild!

Do

1

Place roux ingredients into the Thermomix bowl and cook 3 min/80°C/speed 3. Cool slightly before proceeding.

2

Add dough ingredients except sesame seeds to the Thermomix bowl and blend 10 sec/speed 6.

3

Knead 4 min/dough setting/Interval. Scrape out onto well floured silpat mat and wrap, prove until doubled. This is a very sticky dough, so you will need to use a silicone spatula and mat for ease of working with the dough.

4

Shape into 50g balls with wet hands and place on a paper lined tray. Brush with water and sprinkle with a few sesame seeds. Cover and prove until you are happy with the look of the rise.

5

Place into a cold oven set to 180°C and bake for 15 minutes.
