This recipe first appeared in my passion project which I can scarcely believe has been out and about in the Thermomix world for five years!! I hope you already have a copy of For Foods Sake. It is probably my favourite book because it was my first baby...(does it work that way with kids too??)

Need

  • 2 chicken breast fillets, skin off
  • 600 Grams water
  • 200 Grams curried mayonnaise
  • 200 Grams seedless red grapes or 100g craisins
  • A few sprigs taragon or Italian parsley
  • 2 stalks celery, sliced on the angle
  • 80 Grams walnut pieces, toasted
  • 2 spring onions, sliced
  • a few baby spinach leaves
  • bread or rolls of choice to serve

Cut the chicken into large pieces, and place into simmering basket and insert into Thermomix bowl. Add water to bowl and cook 13 min/100°C/speed 3. Check that the chicken is cooked. Add a couple of minutes if necessary although the chicken should not be dry.

Drain the bowl of water and place the cooked chicken into the bowl. Add maonniase, grapes or craisins and herbs. Shred 4 sec/Reverse/speed 5. Add remaining filling ingredients and combine 4 sec/Reverse/speed 3. Taste to adjust seasoning with salt and pepper.

Serve in fresh rolls, burger buns, or pita pockets, or roll up in warmed tortillas.
