Watermelon Coconut Soothing Nice Cream
When you need to cool a fevered child it can be difficult to get them interested in anything. This could be the answer. Dairy free cooling rehydrating
This originally was written as a cooling and soothing recipe for a sick child in our Immunity Mix; recipes to boost your immunity cookbook, but as it is hot out there and this is pretty in pink, I thought I would add it to your IC recipe stash. It is quite delicious in its own right and you can tell yourself you are boosting your immunity at the same time as downing a LOAD of nice cream. You are welcome my friends! (And let's face it, you may need a bit of soothing this time of year!)

Need
- 300 Grams watermelon in chunks
- 2 Teaspoons vanilla bean paste BUY
- 50 Grams pure maple syrup
- 400 Grams coconut milk tinned is fine Recipe
Do

Place watermelon into the Thermomix bowl and blend 10 sec/speed 10.

Add remaining ingredients and blend 10 sec/speed 10.

Pour into a tray and freeze until solid. Cut into chunks and place into the Thermomix bowl.

Blend with the aid of your Thermomix spatula until soft and creamy. Insert Butterfly and aerate 20 sec/Butterfly/speed 4.
