Apple Streusel Muffins
Tasty strudel muffins, you can change these up a bit with different fruit, raspberries would be fantastic, so would peaches.

The Apple Sauce
- 4 green apples, peeled, cored and cubed
- 1 lemons juice
- 5 Drops doTERRA cinnamon bark oil BUY
- 1 Drop doTERRA Oils ginger oil BUY
- 1 Teaspoon vanilla bean paste BUY
- 1 Drop doTERRA cardamom oil

The Batter
- 180 Grams apple sauce
- 2 eggs
- 180 Grams milk
- 100 Grams Extra Virgin Olive Oil (EVOO) BUY
- 1 Teaspoon vanilla bean paste BUY
- 1 Teaspoon ground cinnamon
- 1/2 Teaspoon fresh nutmeg
- Pinches pink salt flakes BUY
- 300 Grams bakers or strong flour
- 1 Teaspoon baking powder
- 1 Teaspoon baking soda

The Crumble Topping
- 40 Grams dark brown sugar
- 20 Grams raw caster sugar BUY
- 80 Grams bakers or strong flour
- 2 Teaspoons ground cinnamon
- 60 Grams butter melted BUY

Preheat oven to 220°C. Line a muffin tin with 12 cases.

To make the apple sauce, place apples and lemon juice into the Thermomix bowl. Cook 12 min/100°C/speed 1. Blend 10 sec/speed 8. Scrape bowl and repeat. Cool and then add doTERRA oils and vanilla bean paste. Cool.

Place cooled apple sauce, eggs, milk, EVOO, vanilla, cinnamon, nutmeg and salt into the Thermomix bowl. Combine 10 sec/speed 6. Pour into a bowl.

Sift flour, baking powder and baking soda over the top and gently fold in with a spatula.

Spoon into muffin cases.

To make the crumble topping, place all ingredients into a bowl and stir to combine. Don't over do it. We don't want a paste, we want it crumbly.

Sprinkle crumble on top of the batter. Bake for 5 minutes then reduce heat to 180°C and bake for a further 20 minutes.

Cool on a wire rack.
