Quick? Sort of. Yummy? Definitely. Will I be making it again. I sure will. This is SO good. You are welcome!

As a child, a cheese toastie was my comfort food and when I think about it, the same could be true today. This is totally delicious and was an idea for a busy day just to feed us as we worked. Next minute I have the Ciabatta dough rising and the Salsa Verde made. You can of course buy Ciabatta rolls, but I really think our recipe is so easy and so delicious that you should at least give it a go once!

You could use lunch meats on this as well, but we really loved the mushrooms as they give that yummy chewy texture and cook really quickly.

Serve with a salad for a quickie nighttime meal, or even with soup as the cold days begin to creep in!

Make your Ciabatta rolls and Salsa Verde before you need to eat these!

Slice the Ciabatta rolls into halves and place onto a lined baking tray. Drizzle with EVOO and toast until golden under a grill heated to 220°C. Remove.

Thickly slice the mozzarella (I do love the smoked version for this recipe) and place onto the toasted rolls to cover.

Drizzle a good amount of EVOO into a cast iron pan and saute the mushrooms. Season them with the paprika and picante mix, as well as plenty of salt and pepper. When they are well cooked, place them on top of the cheese slices.

Return to the grill and toast until all the cheese is nice and melted, around 6 minutes.

Serve with a good amount of the Salsa Verde on top.
