Chicken with Herbes De Provence
A fragrant French-inspired chicken dinner prepped in the Thermomix, finished in the oven for golden, herb-perfumed perfection.
This Herbes de Provence chicken is your go-to for effortless elegance. The Thermomix takes care of the prep—making the herb mix, crushing garlic, sauteing without the burn, while the oven does the bulk of the work while you chill, wine glass in hand. Aromatic, tender, and rustic in the best way, this is a midweek dinner with weekend vibes.
Serve it with buttery mashed potatoes, ratatouille, green beans with almonds, or crusty French bread and a leafy salad. Just imagine yourself in the Provençal countryside. (Or come with me to Paris and Brittany next year and experience it yourself in the flesh!)

Herbs De Provence
- 4 stalks of rosemary leaves
- 6 lavender flowers
- 2 bay leaves
- 1 Tablespoon fennel seeds
- 2 Tablespoons Dried Thyme
- 2 Tablespoons dried basil
- 2 Tablespoons dried parsley
- 1 Tablespoon dried tarragon
- 1 Tablespoon dried oregano
- 1 Tablespoon dried mint

The Rest
- 1 Kilo boneless chicken thighs, cut in halves
- pink salt flakes and pepper to taste BUY
- 1 brown onion peeled and quartered
- 4 cloves garlic peeled
- 50 Grams butter BUY
- 1 Tablespoon Herbes de Provence
- 200 Grams liquid chicken stock
- 120 Grams cream BUY
- 1 Tablespoon cornflour or cornstarch mixed with a little water or stock to form a slurry

To make the Herbs De Provence, place the rosemary, lavender, bay leaves and fennel into the Thermomix bowl. Mill 10 sec/speed 10. Add remaining ingredients and combine 6 sec/speed 6. You may need to dry this in the oven for an hour, spread onto a lined baking tray at 150°C. Store in an airtight container in the pantry.

Preheat oven to 180°C. Place chicken in a large dish and season with salt and pepper.

Place onion, garlic and butter into the Thermomix bowl. Chop 3 sec/speed 6. Saute 5 min/Varoma/speed 1.

Add remaining ingredients and combine 6 sec/speed 4.

Pour mixture over the chicken. Bake for 1 hour or until chicken is browning and cooked through.

Serve with your choice of sides. We roasted vegetables to have with it, sprinkled with the Herbes de Provence mix, evoo and salt. Delish!
