A very easy thing to whip up when required. If your coconut is struggling, add a bit of Coconut oil. DONE!

Place coconut into Thermomix bowl and blend 3 min/37°C/speed 8.

Stop to scrape down sides of bowl and lid occasionally as required. You will hear the sound alter if there is no coconut being blended.

Pour into a sterilised jar and keep in the pantry until use. It will be quite liquid when you are finished but will solidify at room temperature.
