Heat EVOO in a pan over medium heat. Cook mince till browning.

Add marinara sauce. Simmer for 20 minutes.

Preheat oven to 200°C. Set aside a baking dish.

To assemble lasagne, start with a little mince (to stop sticking) then alternate lasagne sheet, mince and bechamel until you've used everything up. Finishing with bechamel.

Top with grated cheese. Cover with foil and cook for 30 minutes. Remove foil and cook a further 10-15 minutes or until cheese is browning.

We also love to add sliced and roasted pumpkin or fresh baby spinach leaves into the layers. The kids will never know!
