Garlic Cheesy Crostini

These cheesy garlic crostini are proof that the simplest ingredients often make the most irresistible bites. Crisp slices of bread are topped with garlic, fresh herbs and plenty of melty cheese, then baked until golden and bubbling. Making your own baguette definitely gives you brownie points, plus the flavour is entirely different! (Try it, go on!)

Need
- 1-2 French baguette Recipe
- 100 Grams parmesan cheese cubed
- 2 cloves garlic
- 100 Grams butter BUY
- 50 Grams Extra Virgin Olive Oil (EVOO) BUY
- 1 Teaspoon dried red chilli flakes or to taste
- 2-3 anchovy fillets
- 1 Handful sage leaves
- 1 Handful flat leaf parsley
- 1 Handful chives
- 1 limes juiced
- pink salt flakes to taste BUY
- sliced spring onions to garnish

Preheat oven to 220°C.

Place baguettes into hot oven and heat for a few minutes while you make the butter.

Place parmesan and garlic into Thermomix bowl and mill 10 sec/speed 10.

Add remaining ingredients except salt and blend 10 sec/speed 8.

Taste and add salt if needed.

Blend 5 sec/speed 8.

Remove baguette from oven and slice lengthways into halves.

Spread with the butter mixture and return to the oven for 5 minutes until toasted and fragrant.

Slice into pieces and garnish with a few spring onions. Serve hot.
