The Fritters
- 4 cloves garlic
- 2 large zucchini, roughly chopped
- 1 Handful fresh coriander or cilantro
- 2 Teaspoons ground cumin
- 1 Teaspoon ground turmeric
- 1 Pinch dried red chilli flakes
- 2 eggs
- 4 Tablespoons chickpea flour or rice flour
- 20 Grams Extra Virgin Olive Oil (EVOO) BUY

The Toppings
- poached eggs, smashed avocado, tomato relish
Do

Place garlic into the Thermomix bowl and chop 3 sec/speed 7. Add zucchini and chop 3 sec/speed 5.

Tip onto a paper towel and pat dry. Return to the Thermomix bowl and add remaining ingredients, except EVOO. Combine 10 sec/speed 4.

Heat oil in a frypan over medium heat. Cook fritters for a few minutes each side until browned.

Serve with poached eggs and other toppings of your choice.
