Boozy Bacon Jam, how about it?

Bacon jam is a sweet and savoury condiment or spread that combines the rich, smoky flavors of bacon with various ingredients like onions, brown sugar, vinegar, and spices. While it doesn't have the same consistency as traditional fruit jams, it's a versatile and delicious topping that can be used in a variety of delicious culinary ways. We tried to keep the sugar down, so the texture is definitely not jam like, but the flavour is all there and we are sure you will love it, or those to whom you gift it will love it!

In a frying pan over medium heat, cook bacon until rendered but not quite crispy. Drain away the fat where possible. Set aside.

Place chilli, garlic, onion, sun dried tomatoes and chipotle chilli into the Thermomix bowl. Chop 3 sec/speed 6.

Add sugar and vinegar and cook 10 min/Varoma/Reverse/speed soft.

Add remaining ingredients, including cooked bacon, but except Bourbon, and cook 1 hour/Varoma/Reverse/speed soft.

Add bourbon and stir through.

Pour bacon jam into sterlised jars and top with an additional teaspoon of bourbon.

Seal and store in the fridge until use.
